Octopus provides an exquisite new item for your menu. With a luxurious texture and a flamboyant flavor, this mollusc has gathered a hefty following in the seafood markets and your diners will be thrilled to see it on your menu. Unlike squid, octopus is best prepared with long, slow cooking to tenderize the firm meat. If cooked too rapidly, octopus will become tough and chewy. Surprise and delight your diners with the addition of a succulent octopus dish on your menu. Flesh is white while the Outer skin is creamy, with grey tonings. Octopuses have an enjoyable mild flavour, with a firm texture similar to that of squids, though more dense. Marinating will help to tenderise the flesh and strengthen the flavour for enhanced results when cooking quickly. During preparation, remove the guts and the hard beak. Avoid serving the ink sac, but instead use it to darken or enrich accompanying sauces, pasta, bouillabaisse or soups. The head is edible, but can be tough and chewy.
